This cake is one I have been making for years now. It’s by far the most chocolatey cake I have ever made and is always a success. It’s a firm favourite in my house and the longer the cake is around the better it tastes! So for Mother’s day tomorrow I am going to post my Mum’s delicious cake recipe.
What you will need:
10 oz caster sugar
6 oz margarine
3 eggs
1 teaspoon vanilla essence
6 oz low fat natural yogurt
8 oz self raising flour
2 oz cocoa
1 teaspoon bicarbonate of soda
For the icing:
2 oz margarine
2 oz cocoa
3 tablespoons of milk
12 oz icing sugar
Preheat the oven to 170 C/Gas mark 3
Beat the caster sugar and margarine until smooth, then add the eggs, vanilla essence and yogurt and mix together. Sift the cocoa, flour and bicarbonate of soda into the mixture bowl fold until combined.
Put into a lined/greased deep sandwich tin (or you could have 2 tins) and cook for 40-45 minutes.
To make the icing:
Melt the margarine in a pan and stir in the cocoa, heating gently until combined. Remove from the heat and stir in the milk and icing sugar until smooth and blended. You may need to add more milk than stated to get the required consistency. Spread evenly over the cake and allow to set. Enjoy!
